The perfect cup of doodh patti
Doodh patti — milk tea with no water. The scaffolding of a Pakistani office. Get the kettle right and everything else is technique.
One mug of full-fat milk per person. One teaspoon of black tea — Lipton Yellow Label, Brooke Bond Supreme, or whatever you grew up with. One green cardamom, gently crushed.
In a copper or stainless kettle, bring the milk to a low boil. Drop in the tea and cardamom. Cut the heat to a slow simmer. Eight minutes. Watch it carefully — milk will climb up the kettle the moment you blink.
Sugar to taste. Strain into glasses. Drink while it's still scorching.
